More sustainable to buy than cod. Its flesh is light, firm, lean, sweet, and delicate in flavour. Whitefish fillets are best cooked gently as they can become dry easily. A smaller fish from the Cod family, with a silvery-grey body and rounded belly, and rarely found over 2kg. Ours Skin on fillets are 5/6oz, in a one-kilo bag.

Whiting has a high protein content and omega-3 fatty acids which can help maintain a healthy heart and arteries. Whiting fish is also high in Vitamins B2, B12, and A. It also contains zinc that may aid a healthy immune system, magnesium to potentially help keep your muscles moving, iron for energy as well as calcium and Vitamin D for strong bones, teeth, and muscles.

In France, the whiting is usually slowly braised with butter and herb (allumettes). Elsewhere in Europe, it is often baked in a casserole dish with milk or cream and then seasoned with herbs, bay leaves, or garlic. In southern France, it is also boiled for a long time in water like pasta before being fried to make “blanquette de veau” (white veal).
