Herring Milts 450g



This is the soft roe of wild Herrings which are rich and creamy and literally melt in your mouth when cooked correctly. Milts also referred to as melts are the roe of male herring that are caught in the wild. The roe is scooped out and generally cooked whole with the milts (the roe) still inside. Generally, they are poached and served on toast or eaten straight from the pan using a little lemon juice. They have a sweet flavour that can sometimes be described as salty/citrusy.

Herring Milts should only be cooked for shortly before being served as they become rubbery if left in the pan too long. The roe should pop out gently from the side of the milt when it is ready to be removed from the pan. Spread the Milts on toast for a tasty and healthy snack!
