The Bull Huss has actually increased its numbers over the past five years along the UK west coast and the best way to cook it is to bake it. Try just simply wrapping it in Parma ham with a little olive oil and wrap in foil and serve on a bed of mashed potato and spring onion.
When cooked it produces big and flaky flesh that is suited to strong flavourings so also try cooking it with oregano, cumin or smoked paprika.
