Arctic Char 1.1kg-1.4kg
Wild-caught off the coast of Iceland, the Arctic Char has a beautiful silvery to blue skin with pink speckles on each side. Similar to Salmon and Trout it has a red to light pink flesh, praised for its unique flavour. Arctic Char is relatively fatty fish which makes for a succulent, firm but delicately flaky texture when cooked. Our Arctic Char comes gutted and scaled at 1.1-1.4kg, ideal for baking or searing.
Arctic Char is incredibly nutritious, high in protein and Omega-3 fatty acids, its consumption can be beneficial to muscle growth and the health of the heart and blood vessels. Arctic Char also contains a lot of vitamins such as Vitamin B6, B12, Thiamine and Niacin, important good metabolism, healthy blood cell levels and cell regeneration. It contains high amounts of Phosphorus, Magnesium and Iodine, good for healthy bones, muscles and glands.
One of the best ways to prepare Arctic Char is to pan-sear with the skin on. This way the moisture is locked in and its delicious flavour is complemented by the crispiness of the skin. It works great with mashed or roasted potatoes as well as a mix of root vegetables. Season with salt pepper, fresh herbs and a lemon wedge. Try serving with fresh citrusy white wine such as Sauvignon Blanc or Soave Classico.
