INGREDIENTS

What you'll need

  • 500g large raw prawns
  • 4 tbsp extra virgin olive oil
  • 4 garlic cloves, thinly sliced
  • 1 red chilli, finely chopped
  • 1 tsp piri piri seasoning
  • Juice of ½ lemon
  • Small handful parsley, chopped
  • Salt and black pepper
WHAT TO POUR
Rioja Blanco or Albariño.
Method

Step by step

  • Heat the olive oil in a large frying pan.
  • Add the garlic and chilli and cook gently for 1 minute.
  • Add the prawns and cook for 2–3 minutes on each side.
  • Sprinkle over the piri piri seasoning.
  • Add lemon juice and stir well.
  • Finish with parsley and seasoning.
  • Serve immediately with crusty bread.

Avoid overcooking monkfish—it should remain firm and succulent.
