INGREDIENTS
What you'll need
500g large raw prawns
4 tbsp extra virgin olive oil
4 garlic cloves, thinly sliced
1 red chilli, finely chopped
1 tsp piri piri seasoning
Juice of ½ lemon
Small handful parsley, chopped
Salt and black pepper

Albariño or Sauvignon Blanc
Method
Step by step
Heat the olive oil in a large frying pan.
Add the garlic and chilli and cook gently for 1 minute.
Add the prawns and cook for 2–3 minutes on each side.
Sprinkle over the piri piri seasoning.
Add lemon juice and stir well.
Finish with parsley and seasoning.
Serve immediately with crusty bread.
Bradley's Tip
Don't overcook the prawns—they should remain juicy and tender.
